I've got a good bit of Irish in me from my Mom's side and growing up I remember her making Corned Beef and Cabbage on St. Patrick's Day. When I grew up and moved out, I really missed eating this every year, so I eventually decided to try making it myself. It's actually super simple, but you have to cook it a *long* time. Most recipes seem to recommend 2 - 2 1/2 hours, but I think you need to simmer the meat for close to 4 hours.
I also attempted a Gluten Free Irish Soda Bread (which I based on the one here) and it turned out pretty well. In fact, I'm off to go toast a piece...
